We’ve added a new flavor to our maple vinegars

There are more than 1,000 members of The Vermont Maple Sugar Makers’ Association, and we are certainly proud to be one of them.

Of that total, only a handful of Vermont sugar makers produce vinegar from their maple products. And again, we are proud to be in that smaller category.

This month, we are introducing a third flavor of maple-inspired vinegar. While it is hard to make this claim with absolute certainty, we might well be the only Vermont maple producer who’s making that much maple vinegar.

And we’re pretty proud of that as well.

Please consider introducing your tastebuds to our new Maple Apple Brandy Vinegar, made with pure Vermont maple syrup. Made as a limited batch, the new Maple Apple Brandy Vinegar is double-aged, first as an organic maple vinegar, then transferred to apple brandy barrels for another year of aging. The resulting apple and maple overtones make for a one-of-a-kind vinegar that’s as versatile as it is exceptional.

“We first started making our Maple Vinegar about 18 years ago,” said Cecile Branon. “A few years back, we transferred and aged the vinegar in maple bourbon barrels. That gave us Maple Bourbon Vinegar.”

The two maple-inspired vinegars have been staples over the last few years, even gaining the attention of The Vinegar Professor.

After procuring a couple of oak apple brandy barrels, Cecile knew exactly what to do to expand the offerings from her specialty food kitchen, which is already churning out some of the best maple sauces and spices in Vermont.

“We aged our organic maple vinegar in brandy barrels and waited another year. What we produced out of that is amazing.’

As the newest arrival, Maple Apple Brandy Vinegar delivers multiple layers of flavor. It is perfect for salad dressings, marinades, and for quick-pickling vegetables.

“We won’t have more of this for another couple of years,” Cecile said. “It has a real sharp, bright taste with hints of both maple and apple – two key crops of Vermont farmers.”

Branon Family Maple Orchards has received recognition for operating a bird-friendly sugarbush! This has been achieved as part of the Bird-Friendly Maple Project, a partnership between Audubon Vermont, the Vermont Department of Forests, Parks and Recreation, and the Vermont Maple Sugar Makers’s Association.
