Quick and Easy Maple Cheesecake
A Sweet Twist on a Classic Dessert
Modern-day, NY-style cheesecake was invented in the 1930s. It’s a velvety smooth, rich, and creamy dessert that hints of elegance. It can also be fairly simple to make. Here’s a simple way to add a sweet treat to any dinner.
Ingredients
- One 9-inch graham cracker crumb crust
- 8 oz cream cheese softened
- 14 oz can sweetened condensed milk
- 1/3 cup lemon juice concentrate
- 1 tsp. maple syrup (amber rich or Dark Robust)
In a large mixing bowl use a spoon to beat cheese until fluffy. Gradually pour in sweetened condensed milk until smooth. Beat in lemon juice and maple syrup. Pour mixture into prepared pie crust. Refrigerate for 3 hours or until top is set.
Pie topping
- 1 c maple syrup (any grade will work)
- 1 egg
- 1/3 c water
- 3 1/2 tbsp flour
- Pinch of salt
- 2 teaspoons butter
On a stovetop, slowly warm syrup in a pan and begin. In a bowl, combine and beat eggs, water, flour and salt. Add mixture to warm syrup and cook on medium heat. Whisk constantly until it thickens and begins to boil.
Note: You can use a double boiler if you prefer.
Once thickened, remove from heat add butter. Let cool and spread on the cheesecake. Top pie with whipped cream and serve.
