Maple Pumpkin Roll

This is a favorite autumnal dessert that’s a welcome addition to the Thanksgiving dinner table and other holiday gatherings. It’s essentially a maple pumpkin sheet cake filled with a maple cream cheese spread. The rolling is easy (do it while still hot) and the taste is exceptional.

Prep

  • Moisten a cotton cloth or clean towel. Ring out excess water and spread on a clean counter or large cutting board.
  • Heat Oven 375 degrees
  • Grease a 15x10x1 jelly roll pan. Line with parchment or waxed paper, grease and flour the waxed paper.

Roll Ingredients

  • ¾ cup sifted flour
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp Pumpkin pie Spice
  • ½ tsp ground nutmeg
  • ½ tsp salt
  • 3 eggs, slightly beaten
  • 1 cup Organic Maple Sugar
  • 2/3 cup canned solid pack pumpkin
  • 1 cup chopped walnut (optional)
  • Declan’s Maple Cinnamon Sprinkles

Cream Cheese Filling Ingredients

  • 1 cup sifted confectioners’ sugar
  • 1 pkg 8 oz softened cream cheese
  • 6 tbsp butter
  • 1 tsp Dark Robust Maple Syrup

Beat ingredients until smooth in a small bowl and set aside.

Directions

In a small bowl, combine and sift together the dry ingredients: Flour, baking powder, cinnamon, pumpkin pie spice, nutmeg, and salt.

Beat eggs and sugar in a large bowl until thick and fluffy; fold in the canned pumpkin. Stir in sifted ingredients.

Pour mixture into prepared sheet pan, spread evenly. If you are adding walnuts, sprinkle them over the batter in pan.

Bake in preheated oven 375 degrees for 15 minutes, or until center springs back when lightly touched with finger.

Remove cake from oven and loosen around edges of pan.

Tip: It’s important to roll the cake when it’s hot from the oven so it doesn’t crack. The hot cake is soft, pliable, and will roll and set in this shape, so it doesn’t crack. 

Making the Roll

Dust the damp towel with confectioners’ sugar.

Peel parchment paper off the cake, trim ¼” from edges. Gently roll the cake in the damp towel. Let it cool on a rack with the seam side down. Once cake is cooled, unroll carefully. Spread filling, re-roll and keep seam side down. Sprinkle with Declan’s Cinnamon Sprinkles. Refrigerate for at least an hour before serving.

Serving

Cut into slices and enjoy!
