Chewy Maple Cookies


  • ½ c shortening softened
  • 1 c packed Brown Sugar(I used Maple Sugar)
  • 1 large egg
  • ½ c maple Syrup(robust would be the best choice, but any grade would work)
  • ½ teaspoon Vanilla extract
  • 1 ½ c All-purpose Flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt(I did not add because I used salted butter)
  • 1 cup sweetened shredder coconut(optional)


In a bowl cream shortening and sugar. Beat in egg syrup and vanilla until well blended. Combine flour baking powder & salt; add to the creamed mixture. Stir in coconut. Drop by tablespoons 2 in apart onto greased or lined baking sheets. Bake 375 for 12 -15 minutes or lightly browned. Makes about 3 doz.
